in some expensive sports cars? (like the 911 and GTR)
We all know that they have those useless back seats for insurance reasons, but why would the companies allow that knowing that nobody fits in them? The insurance companies should require the back seats to be at least a minimum size, like at least 30 cubic feet; otherwise they'd be considered 2-seaters.

Shhhhh, don't tell them.
Pretty sure 911s and GT-Rs still aren't cheap to insure, regardless of official seat count.

No, the risk tables they have today are specified down to model and sometimes even trim. It has no effect on insurance rates.
It's not the 1940s anymore where you could hoodwink an agent saying you had a 4 seater and they'd be none the wiser.
